Spiced red cabbage

3 strips bacon, diced
1 large onion, chopped
1 large red cabbage, evenly shredded
3 cloves garlic, crushed
1 1/2 T caraway seeds
1/2 C water
2 firm, ripe pears, cored and chopped
juice of one lemon
2 C red wine
3 T red wine vinegar
3/4 C honey
salt and pepper to taste
caraway seeds and snipped fresh chives to garnish

-Fry bacon in pan over low heat for 5-10 minutes or until golden brown

-Stir in the onion and cook until pale golden

-Stir in cabbage, garlic, caraway seeds and the water. Cover and cook for 8-10 minutes

-Add other ingredients. Cook for 10-15 minutes

-If there is too much liquid remaining, uncover and let it reduce

-Garnish & serve
