Bad Captain Chili

1/3 C Olive oil
1/2 C Butter
2lb Ground sirloin
2lb Sirloin steak (cubed with the fat trimmed off)
3 Medium onions (chopped)
1/2 C Minced garlic
1/4 C Dried parsley
3 C Diced tomatoes
1 C Tomato juice
1/4 C Chili powder
2 T Salt
1 1/2 t Ground cumin
1 1/2 t Black pepper
1 T Tabasco
3 cans Beans (your choice)

First, you heat the oil and butter in a big old cooking pot
You then brown the meat at a medium high heat (it’ll take a while…lots o meat)
While that’s browning, you saute the onions, garlic, and parsley in a pan with a little oil–until the onion and garlic are tender
Then you drain the liquid off of the browning meat
Then you stir the onion mixture into the meat
Then stir in the chili powder, salt, cumin, and Tabasco
The add the tomatoes and tomato juice
Throw in the beans
Cover the pot and let it simmer for two hours

Serves a lot of people
